Main Stew:
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (optional)
- 1 ½ pounds boneless skinless chicken thighs, cut into chunks
- 1 sweet potato, peeled and diced
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- ¾ cup creamy peanut butter
- 2 tablespoons tomato paste
- Salt and pepper to taste
Garnish:
- 2 cups chopped kale or spinach
- Chopped peanuts and fresh cilantro
Instructions
- Heat oil: Heat oil in a large pot over medium heat. Add the onion and cook until soft.
- Seasonings: Stir in garlic, ginger, cumin, paprika, and cayenne. Cook until fragrant.
- Cook Chicken: Brown chicken pieces on all sides for about 5 minutes.
- Add Ingredients: Stir in sweet potatoes, bell pepper, diced tomatoes, chicken broth, peanut butter, and tomato paste. Simmer.
- Simmer: Reduce heat, cover, and cook for 25–30 minutes until chicken is tender.
- Add Greens: In the last 5 minutes, add chopped kale or spinach. Season with salt and pepper.
- Serve: Garnish with peanuts and cilantro. Serve hot.
Notes
- Serve with steamed rice or flatbread.
- For a vegetarian version, substitute chickpeas or tofu and use vegetable broth.
