This African Chicken Peanut Stew is a hearty and flavorful dish that combines tender chicken, sweet potatoes, and a rich peanut sauce. Perfect for a cozy dinner with a touch of spice!

Main Stew:

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 1 ½ pounds boneless skinless chicken thighs, cut into chunks
  • 1 sweet potato, peeled and diced
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • ¾ cup creamy peanut butter
  • 2 tablespoons tomato paste
  • Salt and pepper to taste

Garnish:

  • 2 cups chopped kale or spinach
  • Chopped peanuts and fresh cilantro

Instructions

  1. Heat oil: Heat oil in a large pot over medium heat. Add the onion and cook until soft.
  2. Seasonings: Stir in garlic, ginger, cumin, paprika, and cayenne. Cook until fragrant.
  3. Cook Chicken: Brown chicken pieces on all sides for about 5 minutes.
  4. Add Ingredients: Stir in sweet potatoes, bell pepper, diced tomatoes, chicken broth, peanut butter, and tomato paste. Simmer.
  5. Simmer: Reduce heat, cover, and cook for 25–30 minutes until chicken is tender.
  6. Add Greens: In the last 5 minutes, add chopped kale or spinach. Season with salt and pepper.
  7. Serve: Garnish with peanuts and cilantro. Serve hot.

Notes

  • Serve with steamed rice or flatbread.
  • For a vegetarian version, substitute chickpeas or tofu and use vegetable broth.
