- 1 teaspoon vanilla extract

Instructions
- Prepare the Blueberry Filling: In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract; stir gently to coat.
- Assemble the Hand Pies: Unroll pie crusts and cut into 4–5 inch circles. Place blueberry filling in the center of each circle. Fold dough over to form a half-moon and seal edges with a fork.
- Finish and Air Fry: Brush tops with egg wash, sprinkle with coarse sugar if desired. Preheat air fryer to 350°F (175°C). Arrange pies in a single layer in the air fryer basket and cook for 8–10 minutes until golden brown. Let cool before serving.
