  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar for sprinkling (optional)

Instructions

  1. Prepare the Blueberry Filling: In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract; stir gently to coat.
  2. Assemble the Hand Pies: Unroll pie crusts and cut into 4–5 inch circles. Place blueberry filling in the center of each circle. Fold dough over to form a half-moon and seal edges with a fork.
  3. Finish and Air Fry: Brush tops with egg wash, sprinkle with coarse sugar if desired. Preheat air fryer to 350°F (175°C). Arrange pies in a single layer in the air fryer basket and cook for 8–10 minutes until golden brown. Let cool before serving.
