Instructions

  1. Prepare the pan: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Mix wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Then add the egg, vanilla extract, and almond extract, mixing until fully combined.
  3. Add dry ingredients: Stir in the flour, baking powder, and salt just until the batter has no dry streaks, taking care not to overmix.
  4. Fold in mix-ins: Gently fold the sliced almonds, chopped croissant pieces, and crumbled almond paste or marzipan if using, ensuring even distribution without breaking up the croissant pieces too much.
  5. Assemble and bake: Spread the batter evenly into the prepared pan and smooth the surface. Sprinkle the remaining sliced almonds on top. Bake for 22–26 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
