Instructions
- Prepare the pan: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
- Mix wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Then add the egg, vanilla extract, and almond extract, mixing until fully combined.
- Add dry ingredients: Stir in the flour, baking powder, and salt just until the batter has no dry streaks, taking care not to overmix.
- Fold in mix-ins: Gently fold the sliced almonds, chopped croissant pieces, and crumbled almond paste or marzipan if using, ensuring even distribution without breaking up the croissant pieces too much.
- Assemble and bake: Spread the batter evenly into the prepared pan and smooth the surface. Sprinkle the remaining sliced almonds on top. Bake for 22–26 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool and serve: Allow the blondies to cool completely in the pan before slicing into 9 pieces. Dust with powdered sugar just before serving if desired.
