Chicken Soup:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast or thighs (cut into bite-sized pieces)
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 3 medium carrots (sliced)
  • 2 celery stalks (sliced)
  • 1 cup chopped kale or spinach
  • 6 cups low-sodium chicken broth
  • juice of 1/2 lemon
  • chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook for 5–6 minutes until lightly browned. Remove chicken and set aside.
  2. In the same pot, add onion, garlic, and ginger. Sauté for 3–4 minutes until fragrant. Stir in turmeric, cumin, black pepper, and salt, cooking for 1 minute more.
  3. Add carrots and celery, then return the chicken to the pot. Pour in the chicken broth and bring to a gentle boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender and chicken is cooked through.
  4. Stir in kale or spinach and cook for another 2–3 minutes until wilted. Finish with fresh lemon juice. Serve warm, garnished with chopped cilantro if desired.
