Description

This Apple Cranberry Coleslaw is a refreshing and colorful twist on traditional coleslaw. Crisp cabbage, sweet apples, tart cranberries, and a creamy dressing come together to create a perfect side dish for any occasion.

Ingredients

Scale

Main Coleslaw Ingredients:

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, grated
  • 1 green apple, julienned or thinly sliced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped green onions
  • 1/4 cup chopped pecans or walnuts (optional)

For the dressing:

  • 1/3 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Coleslaw: In a large mixing bowl, combine the green and red cabbage, carrot, apple, cranberries, green onions, and nuts if using.
  2. Make the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  3. Combine and Chill: Pour the dressing over the slaw mixture and toss well to coat. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Toss again before serving.

Notes

  • This coleslaw is best served chilled and can be made up to one day in advance.
  • For a dairy-free version, use vegan mayo.
  • Add poppy seeds or sunflower seeds for a fun crunch.
