Crisp Topping:

  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat the oven to 325°F (160°C) and line a 9-inch springform pan with parchment paper. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter. Press into the pan and bake for 8 minutes.
  2. Beat the cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Pour over the crust.
  3. Toss diced apples with sugar, cinnamon, and nutmeg. Spread over the cheesecake layer.
  4. Mix oats, brown sugar, flour, and cinnamon. Sprinkle over the apples.
  5. Bake for 50–60 minutes until set. Cool, then refrigerate before serving.
