Sandwich:
- 4 slices sourdough or whole grain bread
- 1 ripe avocado (mashed)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons butter (softened)
- Fresh tomato slices or spinach (optional)
Instructions
- Mash Avocado: In a small bowl, mash the avocado and season with garlic powder, red pepper flakes (if using), salt, and pepper.
- Butter Bread: Butter one side of each slice of bread.
- Assemble: Place two slices of bread, buttered side down, in a skillet over medium heat. Spread half the avocado mixture on each, then layer with cheddar, mozzarella, and optional tomato or spinach. Top with remaining bread slices, buttered side up.
- Grill: Grill the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
- Serve: Slice and serve immediately.
Notes
- Add a fried egg or cooked bacon for extra flavor.
- Swap in pepper jack or Havarti for a twist.
