Sandwich:

  • 4 slices sourdough or whole grain bread
  • 1 ripe avocado (mashed)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons butter (softened)
  • Fresh tomato slices or spinach (optional)

Instructions

  1. Mash Avocado: In a small bowl, mash the avocado and season with garlic powder, red pepper flakes (if using), salt, and pepper.
  2. Butter Bread: Butter one side of each slice of bread.
  3. Assemble: Place two slices of bread, buttered side down, in a skillet over medium heat. Spread half the avocado mixture on each, then layer with cheddar, mozzarella, and optional tomato or spinach. Top with remaining bread slices, buttered side up.
  4. Grill: Grill the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
  5. Serve: Slice and serve immediately.
