Wet Ingredients:

  • 1 3/4 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract

Additional:

  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Mix Dry Ingredients: In a large bowl, combine oats, almonds, baking powder, cinnamon, and salt.
  3. Prepare Wet Ingredients: In another bowl, mix milk, maple syrup, egg, melted coconut oil, and vanilla extract.
  4. Combine Ingredients: Pour wet ingredients into the dry mix and stir until well combined. Gently fold in blueberries.
  5. Bake: Spread the mixture in the baking dish and bake for 35–40 minutes until golden and set.
  6. Cool and Serve: Allow to cool slightly before serving.
