Ingredients
Main Cake:
1 cup mashed ripe bananas (about 2 large), 1 cup granulated sugar, 2 large eggs, 1 tablespoon apricot jam, 1 tablespoon unsalted butter (melted), 1 teaspoon white vinegar, 1 cup all-purpose flour, 1 teaspoon baking soda, ¼ teaspoon salt, ½ cup whole milk
Sauce:
½ cup heavy cream, ½ cup whole milk, ½ cup granulated sugar, ¼ cup unsalted butter, 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9-inch square baking dish.
- Mix wet ingredients: In a large bowl, combine mashed bananas, sugar, eggs, apricot jam, melted butter, and vinegar.
- Combine dry ingredients: In a separate bowl, mix flour, baking soda, and salt. Add to the wet mixture alternating with milk.
- Bake: Pour batter into the dish and bake for 35–40 minutes until golden.
- Make the sauce: In a saucepan, heat cream, milk, sugar, and butter. Stir in vanilla.
- Finish: Once baked, poke holes in pudding, pour sauce over, and let it sit before serving.
