For the Casserole:
- 2 cups cooked chicken breast (shredded or chopped)
- 8 oz penne or rotini pasta
- 1 cup broccoli florets (lightly steamed or blanched)
- 1 red bell pepper (diced)
- ½ cup shredded carrots
- ¾ cup mayonnaise
- ½ cup sweet chili sauce
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey
- 2 cloves garlic (minced)
- 1½ cups shredded mozzarella cheese
- ¼ cup chopped green onions
- Salt and pepper to taste

Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch casserole dish with cooking spray.
- Cook the pasta: Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- Make the Bang Bang sauce: In a large mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and garlic. Stir in the shredded chicken, cooked pasta, broccoli, bell pepper, carrots, and half of the shredded mozzarella. Season with salt and pepper.
- Assemble the casserole: Pour the mixture into the prepared casserole dish and top with the remaining mozzarella cheese.
- Bake: Bake for 20–25 minutes, or until hot and bubbly and the cheese is melted. Garnish with chopped green onions before serving.
Notes
- For added crunch, sprinkle panko breadcrumbs on top before baking.
- This casserole can be made ahead and refrigerated; add 5–10 minutes to the baking time if chilled.
