Oysters:

Smoky Uni Butter:

- 1 teaspoon lemon juice
- 1 teaspoon finely chopped chives
- Salt to taste

Instructions
- Prepare Smoky Uni Butter: In a small bowl, mash together the softened butter, uni, smoked paprika, garlic, lemon juice, and a pinch of salt until smooth. Fold in chopped chives and refrigerate for 15–20 minutes to firm up.
- Grill Oysters: Preheat a grill to medium-high heat. Place oysters directly on the grill, shell side down, and cook for 3–4 minutes until the edges begin to curl slightly and juices start to bubble.
- Add Butter and Serve: Top each oyster with a spoonful of smoky uni butter and grill for another 1–2 minutes, just until the butter melts and bubbles. Remove from grill and serve hot on a bed of crushed ice or rock salt.
