Other Ingredients:

  • 1 can (10 oz) red enchilada sauce, divided
  • 1 can (4 oz) diced green chiles
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas (6–8 inches)
  • Chopped cilantro and sour cream for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Cook the Beef: In a skillet, cook ground beef and onion until browned. Add garlic, spices, green chiles, and ½ cup enchilada sauce. Simmer, then stir in ½ cup of each cheese.
  3. Fill and Roll: Spoon beef mixture into tortillas, roll up, and place seam-side down in the baking dish.
