Other Ingredients:
- 1 can (10 oz) red enchilada sauce, divided
- 1 can (4 oz) diced green chiles
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas (6–8 inches)
- Chopped cilantro and sour cream for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- Cook the Beef: In a skillet, cook ground beef and onion until browned. Add garlic, spices, green chiles, and ½ cup enchilada sauce. Simmer, then stir in ½ cup of each cheese.
- Fill and Roll: Spoon beef mixture into tortillas, roll up, and place seam-side down in the baking dish.
- Bake: Pour remaining sauce over enchiladas, sprinkle with cheese, and bake for 20–25 minutes.
- Serve: Garnish with cilantro and sour cream before serving.
