- 1 cup shredded sweetened coconut
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Combine Wet and Dry Mixtures: Gradually stir the dry ingredients into the wet mixture.
- Add Mix-ins: Fold in the oats, chocolate chips, coconut, and nuts if using.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10–12 minutes until golden.
- Cool and Enjoy: Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
