Description

This Best Ever Pepper Steak Recipe features tender beef stew meat sautéed with bell peppers and garlic, then slow cooked with stewed tomatoes, beef broth, and Worcestershire sauce. The result is a flavorful, hearty dish perfect for a comforting meal with rich, savory notes and tender beef that melts in your mouth.

Ingredients

Scale

Beef and Coating

  • 1 lb. beef stew meat
  • 1 Tbsp. all-purpose flour
  • 1 tsp. seasoned salt

Vegetables

  • 2 large bell peppers, chopped into large chunks
  • 1 tsp. minced garlic

Liquids and Sauces

  • 1 can stewed tomatoes
  • 1 can beef broth
  • 3 Tbsp. Worcestershire sauce
  • 1 Tbsp. vegetable oil

Instructions

  1. Prepare the Flour Mixture: In a small bowl, mix together the all-purpose flour and seasoned salt until well combined to create a flavorful coating for the beef.
  2. Coat the Beef: Sprinkle the seasoned flour evenly over the beef stew meat and toss thoroughly to ensure each piece is well coated with the flour mixture.
  3. Sear the Meat and Peppers: Heat the vegetable oil in a large skillet over medium-high heat. Add the coated beef and chopped bell peppers to the skillet and sauté for about 3-5 minutes until the beef is seared on all sides and the peppers begin to soften.
  4. Add Garlic: Stir in the minced garlic and sauté for an additional 30 seconds until fragrant to build depth of flavor.
  5. Transfer to Crockpot: Carefully transfer the seared meat, softened peppers, and garlic from the skillet into a slow cooker or Crockpot for the next phase of cooking.
  6. Add Wet Ingredients: Pour in the can of stewed tomatoes, beef broth, and Worcestershire sauce into the Crockpot, then stir gently to combine all ingredients evenly.
  7. Slow Cook: Cover the Crockpot and cook on low heat for 8 hours. This slow cooking process allows the beef to become tender and juicy while the flavors meld beautifully.

Notes

  • For best flavor, use fresh bell peppers and quality beef stew meat.
  • Do not skip searing the beef as it helps develop a deeper flavor and better texture.
  • If short on time, the recipe can be cooked on high for 4-5 hours, but slow cooking on low is ideal for tenderness.
  • Serve with steamed rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
  • If a thicker sauce is desired, remove the lid during the last 30 minutes of cooking to reduce the liquid.
