Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Add mix-ins: Stir in the oats, chocolate chips, and nuts if using.
- Bake: Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are golden and the centers are set.
- Cool and enjoy: Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute raisins for chocolate chips if preferred.
- For a chewier cookie, slightly underbake and let cool on the tray.
