  • 1/2 cup vanilla protein powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/4 cup almond butter or cashew butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup unsweetened almond milk (more if needed)
  • 1 teaspoon vanilla extract

Additional:

  • 2 tablespoons rainbow sprinkles
  • 2 tablespoons white chocolate chips (optional)

Instructions

  1. Dry Ingredients: In a large mixing bowl, combine oat flour, protein powder, and salt.
  2. Wet Ingredients: In a separate bowl, whisk together almond butter, maple syrup, almond milk, and vanilla extract until smooth.

  3. Pour the wet ingredients into the dry and stir until a thick dough forms. If the dough is too dry, add a splash more almond milk.
  4. Gently fold in the sprinkles and white chocolate chips if using.
  5. Press the mixture evenly into a parchment-lined 8×8-inch baking dish.
  6. Refrigerate for at least 1 hour to set, then cut into bars.
  7. Store in an airtight container in the fridge for up to one week.
