Black Bean Burger:

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil for cooking
  • Burger buns and desired toppings (lettuce, tomato, cheese, avocado, condiments)


Instructions

  1. Mash the Beans: In a large bowl, mash black beans until mostly smooth with some chunks.
  2. Add Ingredients: Mix in breadcrumbs, onion, bell pepper, garlic, eggs, soy sauce, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Form Patties: Divide mixture into 4 portions and shape into patties.
  4. Cook Patties: Heat olive oil in a skillet, cook patties for 4–5 minutes per side until golden brown.
  5. Serve: Serve on buns with desired toppings.

Notes

  • For a vegan version, replace eggs with 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water).
  • These patties can be made ahead and chilled or frozen for later use.
