- 1 small head green cabbage (chopped)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup beef or vegetable broth (as needed for moisture)

Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 5–7 minutes, breaking it up with a spoon, until browned and cooked through. Drain excess fat if needed.
- Add the diced onion and cook for 3–4 minutes until softened, then stir in the garlic and cook for another 30 seconds.
- Stir in the chopped cabbage and cook for 5–6 minutes, stirring frequently, until it begins to wilt.
- Add the diced tomatoes, tomato paste, smoked paprika, oregano, salt, pepper, and red pepper flakes if using. Stir well to combine. If the mixture seems dry, add a splash of broth.
- Cover and simmer for 10–12 minutes, stirring occasionally, until the cabbage is tender and the flavors are blended.
- Garnish with fresh parsley and serve hot.

- For a lower-carb option, skip the diced tomatoes and use a splash of broth or tomato sauce instead.
- This dish also works well with ground turkey or pork.
