  • 3 garlic cloves (minced)
  • 1 small head green cabbage (chopped)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup beef or vegetable broth (as needed for moisture)
  • chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 5–7 minutes, breaking it up with a spoon, until browned and cooked through. Drain excess fat if needed.
  2. Add the diced onion and cook for 3–4 minutes until softened, then stir in the garlic and cook for another 30 seconds.
  3. Stir in the chopped cabbage and cook for 5–6 minutes, stirring frequently, until it begins to wilt.
  4. Add the diced tomatoes, tomato paste, smoked paprika, oregano, salt, pepper, and red pepper flakes if using. Stir well to combine. If the mixture seems dry, add a splash of broth.
  5. Cover and simmer for 10–12 minutes, stirring occasionally, until the cabbage is tender and the flavors are blended.
  6. Garnish with fresh parsley and serve hot.

Notes

  • For a lower-carb option, skip the diced tomatoes and use a splash of broth or tomato sauce instead.
  • This dish also works well with ground turkey or pork.
