Description

Chicken:

  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil

Sauce:

  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1/2 small red onion (thinly sliced)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese

Other:

  • 8 oz fettuccine or penne pasta
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken: Toss chicken strips with Cajun seasoning until evenly coated. Cook in a skillet until done, then set aside.
  3. Make the Sauce: In the same skillet, sauté garlic, bell peppers, and onion. Add cream, Parmesan, and cooked pasta and chicken. Toss to combine.
  4. Finish and Serve: Season with salt and pepper, garnish with parsley, and serve hot.
