Chicken:
- 2 boneless, skinless chicken breasts (sliced into strips)
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
Sauce:
- 1 tablespoon butter
- 3 cloves garlic (minced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1/2 small red onion (thinly sliced)
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
Other:
- 8 oz fettuccine or penne pasta
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Chicken: Toss chicken strips with Cajun seasoning until evenly coated. Cook in a skillet until done, then set aside.
- Make the Sauce: In the same skillet, sauté garlic, bell peppers, and onion. Add cream, Parmesan, and cooked pasta and chicken. Toss to combine.
- Finish and Serve: Season with salt and pepper, garnish with parsley, and serve hot.
Notes
- For extra heat, add cayenne pepper or red pepper flakes.
