Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add wet ingredients: Beat in the egg, vanilla, and almond extract. Stir in the ricotta cheese until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
