Instructions

  1. Make the Caramel Popcorn: Line a baking sheet with parchment paper. In a medium saucepan over medium heat, combine sugar, butter, corn syrup, and salt. Stir until melted and bubbling, then simmer for 3–4 minutes without stirring. Remove from heat and stir in baking soda and vanilla—mixture will bubble. Immediately pour over popcorn and stir quickly to coat. Spread onto the prepared baking sheet and let cool completely. Break into small chunks once set.
  2. Make the Chocolate Domes: Melt the chocolate gently using a double boiler or microwave in 20-second intervals, stirring until smooth. Brush or spoon a layer of chocolate into each cavity of the silicone dome mold. Refrigerate for 10 minutes, then repeat with a second layer to ensure thickness. Chill until fully set, about 30 minutes. Carefully remove chocolate domes from the mold and store in the fridge until ready to assemble.
  3. Assemble: To serve, place a handful of caramel popcorn in a bowl or on a plate and top with a chocolate dome. Pour warm chocolate or caramel sauce over the dome at the table to melt it open and reveal the popcorn surprise. Serve with a scoop of ice cream or a dollop of whipped cream for extra indulgence.
