Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a loaf pan.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In a large bowl, beat eggs, oil, sugars, and vanilla until well combined. Stir in carrots and apples.
- Combine dry and wet ingredients: Add the dry ingredients to the wet mixture and stir until just combined. Fold in nuts if using.
- Bake: Pour the batter into the pan and bake for 50–60 minutes until a toothpick comes out clean.
- Cool and serve: Let the bread cool before slicing and serving.
