For the cream cheese frosting:

  • 4 oz cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Mix wet ingredients: In a large bowl, whisk together oil, granulated sugar, brown sugar, eggs, and vanilla until smooth. Stir in the grated carrots.
  4. Combine and bake: Add the dry ingredients to the wet mixture and stir just until combined. Fold in chopped nuts if using. Pour the batter into the prepared pan and bake for 25–30 minutes. Cool before frosting.
