Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla until smooth.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger. Gradually add these dry ingredients to the wet mixture.
  5. Fold in carrots and nuts: Fold in the grated carrots, oats, and nuts if using.
