- 1 cup shredded sharp cheddar cheese
- 1/2 cup cooked bacon or breakfast sausage, crumbled
- 1/4 cup diced bell pepper
- 1/4 cup diced onion
Garnish:
- Optional chopped chives
Instructions
- Preheat oven: Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin.
- Mix eggs: In a medium bowl, whisk together eggs, milk, salt, and pepper until well blended.
- Add fillings: Stir in cheddar cheese, cooked bacon or sausage, bell pepper, and onion.
- Fill muffin tin: Divide mixture evenly among muffin cups, filling each about three-quarters full.
- Bake: Bake for 12–15 minutes, or until eggs are set and lightly golden.
- Cool and garnish: Let cool for 2–3 minutes before removing from the tin. Garnish with chives if desired.
- Serve or store: Serve warm or store in an airtight container in the refrigerator for up to 4 days.
Notes
- These can be made ahead and reheated in the microwave for 20–30 seconds.
- For a vegetarian version, omit the meat and add extra vegetables like spinach or mushrooms.
