Instructions

  1. Prepare the Egg Mixture: In a medium bowl, crack the eggs and add milk, salt, and pepper. Whisk vigorously until fully combined and slightly frothy to ensure fluffy scrambled eggs.
  2. Cook the Eggs: Heat 15 grams of butter in a large non-stick skillet over medium-low heat. Pour in the egg mixture and let it sit undisturbed until the edges begin to set. Gently fold the eggs from the edges to the center, continuing until they are about 80% cooked but still glossy. Remove from heat and transfer the eggs to a plate to prevent overcooking.
  3. Prepare the Skillet: Wipe the skillet clean to remove any egg residue. Return it to medium-low heat and melt 7.5 grams of butter to prevent sticking while cooking the quesadilla.
  4. Assemble the Quesadilla: Place one tortilla in the skillet and evenly sprinkle 50 grams of shredded cheddar cheese over its entire surface. Spoon half of the scrambled eggs onto one half of the tortilla, then fold the empty half over to cover the filling. Press gently to seal the quesadilla.
  5. Cook the Quesadilla: Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is fully melted. Flip carefully to avoid spilling the filling.
  6. Finish the Process: Remove the cooked quesadilla to a cutting board. Repeat the layering, folding, and cooking process with the remaining butter, tortillas, cheese, and eggs. Allow each quesadilla to rest for one minute before slicing into wedges and serving warm.
