- 1 cup grated zucchini (squeezed dry)

- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled feta cheese (optional)
Wrappers and Topping:
- 8 egg roll wrappers or spring roll wrappers
- olive oil spray or melted butter for brushing
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 2 minutes. Add zucchini, bell pepper, and carrot. Cook until softened.
- Season and Cool: Stir in Italian seasoning, salt, and pepper. Let the mixture cool slightly, then add mozzarella and feta.
- Fill and Roll: Place filling on a wrapper, roll tightly, folding in the sides, and seal with water. Repeat with remaining wrappers.
- Bake: Brush or spray rolls with oil or butter. Bake for 20–25 minutes until golden and crisp. Serve warm.

- Add chopped spinach or mushrooms for extra flavor.
- These freeze well before baking—bake from frozen with additional time.
