Instructions
- Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, pepper, and smoked paprika.
- Add-ins: Fold in corn, cheddar cheese, green onions, and parsley.
- Frying: Heat oil in a large skillet over medium heat. Drop batter by spoonfuls into the skillet, flatten slightly, cook until golden brown, and transfer to a plate lined with paper towels.
- Serve hot with your favorite dipping sauce.
Wet Ingredients: In a separate bowl, beat eggs and milk until combined. Pour wet ingredients into dry ingredients and stir until just combined.
Notes
- For a spicier version, add a pinch of cayenne pepper or diced jalapeño to the batter.
- Keep fritters warm in a 200°F (95°C) oven while frying remaining batches.
- To make them lighter, pan-fry with minimal oil or air fry at 375°F (190°C) for 8–10 minutes, flipping halfway.
