For the Creamy Parmesan Pasta:
- 8 ounces fettuccine or pasta of choice
- 2 tablespoons unsalted butter
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Reserved pasta water as needed
Instructions
- Make the Chicken Bites: Season the chicken pieces with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes, turning to brown all sides. Reduce heat to medium and add the butter and garlic. Cook for 2 more minutes, stirring often until the garlic is fragrant and chicken is cooked through. Sprinkle with mozzarella and Parmesan cheese. Cover the skillet with a lid and cook for 1–2 more minutes until the cheese is melted. Set aside and keep warm.
- Make the Pasta: While the chicken cooks, boil pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain. In a saucepan over medium heat, melt butter and sauté garlic for 1 minute. Add the heavy cream and simmer for 2–3 minutes. Stir in Parmesan, salt, and pepper. Add the drained pasta and toss to coat, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
- To Serve: Divide the creamy pasta among bowls or plates and top with cheesy garlic butter chicken bites. Garnish with chopped parsley if desired and serve warm.
