Chicken Broccoli Rice Casserole:
- 2 cups cooked chicken, shredded or cubed
- 2 cups cooked white or brown rice
- 2 cups fresh or frozen broccoli florets (steamed or blanched)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup crushed Ritz crackers or breadcrumbs (optional topping)
- 2 tablespoons melted butter
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix Ingredients: In a large bowl, combine chicken, rice, broccoli, soup, sour cream, milk, 1 cup cheese, garlic powder, onion powder, salt, and pepper.
- Spread Mixture: Spread the mixture in the baking dish, top with remaining cheese.
- Add Topping: Optionally, mix breadcrumbs with melted butter and sprinkle over the top.
- Bake: Bake for 25–30 minutes until bubbly and golden.
- Serve: Let cool for 5 minutes before serving.
