Instructions
- Sauté the Chicken: In a large pot, heat the oil over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove the chicken from the pot and set it aside.
- Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté until the onions are soft and fragrant, about 3-5 minutes.
- Cook Vegetables: Add the cubed potatoes and carrots. Cook for 5-7 minutes, stirring occasionally until they begin to soften.
- Add Remaining Ingredients: Return the browned chicken to the pot. Add the tomato sauce, soy sauce, sugar, paprika if using, and bay leaf. Stir to combine everything.
- Simmer: Pour in the water or chicken broth, just enough to cover the chicken and vegetables. Bring it to a boil, then lower the heat and let it simmer for about 30-40 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Incorporate Olives and Peas: Add the sliced green olives and peas to the stew. Stir to combine and cook for another 5-7 minutes, until the peas are heated through and the olives impart their flavor.
- Final Seasoning: Taste the sauce and adjust the seasoning with salt and pepper as needed. If desired, stir in grated cheese for a creamier texture.
