Instructions

  1. Sauté the Chicken: In a large pot, heat the oil over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove the chicken from the pot and set it aside.
  2. Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté until the onions are soft and fragrant, about 3-5 minutes.
  3. Cook Vegetables: Add the cubed potatoes and carrots. Cook for 5-7 minutes, stirring occasionally until they begin to soften.
  4. Add Remaining Ingredients: Return the browned chicken to the pot. Add the tomato sauce, soy sauce, sugar, paprika if using, and bay leaf. Stir to combine everything.
  5. Simmer: Pour in the water or chicken broth, just enough to cover the chicken and vegetables. Bring it to a boil, then lower the heat and let it simmer for about 30-40 minutes, or until the chicken is fully cooked and the vegetables are tender.
  6. Incorporate Olives and Peas: Add the sliced green olives and peas to the stew. Stir to combine and cook for another 5-7 minutes, until the peas are heated through and the olives impart their flavor.
  7. Final Seasoning: Taste the sauce and adjust the seasoning with salt and pepper as needed. If desired, stir in grated cheese for a creamier texture.
