Description
A comforting and hearty chicken rice soup that is perfect for a cozy meal. This homemade soup is packed with tender chicken, vegetables, and rice in a flavorful broth.

For the Soup:
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1/2 tsp dried parsley
- 6 cups chicken broth
- 1 cup cooked or uncooked white rice
- 2 cups cooked, shredded chicken
- salt and black pepper to taste
- lemon wedges and fresh parsley for serving (optional)
Instructions
- In a large soup pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5–7 minutes until softened.
- Stir in the garlic, thyme, and parsley, and cook for another minute.
- Pour in the chicken broth and bring to a boil. If using uncooked rice, stir it in now and reduce the heat to a simmer. Cover and cook for 15–20 minutes until the rice is tender.
- If using cooked rice, add it in after the broth comes to a simmer and cook for 5–7 minutes to heat through.
- Stir in the cooked chicken and simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot with fresh parsley and a squeeze of lemon if desired.
Notes
- For extra richness, add a splash of cream or a pat of butter at the end.
- You can use rotisserie chicken or leftover roast chicken for convenience.
- Brown rice or wild rice also work—just adjust the cooking time accordingly.
