- 8 small corn or flour tortillas
For the Pineapple Salsa:
- 1 1/2 cups fresh pineapple, diced
- 1/4 cup red onion, finely chopped
- 1/2 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Pinch of salt

Instructions
- Prepare the Chicken: In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Rub the spice blend over both sides of the chicken. Cook in a skillet with olive oil until golden brown and cooked through.
- Make the Pineapple Salsa: Combine diced pineapple, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Set aside.
- Warm the Tortillas: Heat tortillas in a skillet until soft.
- Assemble the Tacos: Fill tortillas with chicken, top with pineapple salsa, and optional toppings. Serve and enjoy!
