- 1 pound boneless, skinless chicken breasts, sliced

For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon chopped fresh dill or 1 teaspoon dried dill
- Salt and pepper to taste
For Serving:
- 2 cups cooked brown rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup chopped cucumber
- ½ cup crumbled feta cheese
- ¼ cup sliced red onion
- ¼ cup kalamata olives (optional)
- Fresh dill or parsley for garnish
Instructions
- Marinate the Chicken: In a medium bowl, toss sliced chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper. Let marinate for at least 15 minutes.
- Prepare the Tzatziki Sauce: Mix all sauce ingredients in a bowl until well combined. Adjust seasoning to taste and refrigerate until ready to use.
- Cook the Chicken: Heat a skillet over medium-high heat. Cook chicken for 4–5 minutes per side or until fully cooked and golden brown.
- Assemble the Bowls: Divide cooked rice or quinoa among serving bowls. Top with cooked chicken, cherry tomatoes, cucumber, feta, red onion, and olives if using. Drizzle with tzatziki sauce and garnish with fresh herbs. Serve warm or chilled.
