Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Mushroom Sauce
- 2 tablespoons unsalted butter
- 8 ounces cremini or white mushrooms, sliced
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/4 teaspoon dried thyme
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Season and Cook Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
- Prepare Mushroom Sauce: In the same skillet, reduce heat to medium and add the butter. Once melted, add the sliced mushrooms and cook for 5–7 minutes until they are browned and softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Deglaze and Simmer Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan to add flavor. Stir in the heavy cream, Dijon mustard, and dried thyme. Let the sauce simmer gently for 3–4 minutes until it thickens slightly.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet and spoon the mushroom sauce over the top. Simmer everything together for an additional 2–3 minutes to reheat the chicken and allow flavors to meld.
- Garnish and Serve: Sprinkle with chopped fresh parsley if desired and serve warm, ideally over mashed potatoes, rice, or pasta for a complete meal.
Notes
- Serve this dish over mashed potatoes, rice, or pasta to make a satisfying complete meal.
- You can substitute chicken thighs for breasts if you prefer darker meat with more flavor.
- For a lighter sauce, replace heavy cream with half-and-half.
- This recipe is naturally gluten-free when using gluten-free chicken broth.
