For the crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup semisweet chocolate, melted and slightly cooled
For the topping:
- 1 can (21 ounces) cherry pie filling
- 2 ounces semisweet chocolate, melted, for drizzling
Instructions
- Preheat oven: Preheat oven to 325°F (160°C). Mix chocolate cookie crumbs, sugar, and melted butter. Press into pan and bake.
- Prepare filling: Beat cream cheese and sugar, add eggs, then mix in sour cream, vanilla, and almond extract. Pour half of batter into crust. Stir melted chocolate into remaining batter and spoon over plain batter.
- Bake: Bake for 55–65 minutes until set but slightly jiggly. Cool in oven, then refrigerate.
- Finish: Top with cherry pie filling and drizzle with melted chocolate before serving.
Notes
- For a deeper chocolate flavor, use dark chocolate instead of semisweet.
- Try with fresh pitted cherries in place of pie filling when in season.
