Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Wet Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract

Additional Ingredients:

  • 1 1/2 cups peeled and finely chopped apples (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. Mix the wet ingredients: In a large bowl, beat together the oil, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  4. Combine wet and dry ingredients: Stir the dry ingredients into the wet ingredients just until combined. Fold in the chopped apples and nuts (if using).
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • This bread stays moist for several days and tastes even better the next day.
  • Serve warm with butter or cream cheese.
