Description

Cloud Bread is a light, fluffy, and low-carb alternative to traditional bread, perfect for those following ketogenic or gluten-free diets. Made primarily from eggs and cream cheese or Greek yogurt, this simple recipe yields a soft, airy bread that can be used for sandwiches, burgers, or as a snack.

Ingredients

Scale

Egg Mixture

  • 3 large eggs (separated)
  • 1/4 teaspoon cream of tartar

Wet Ingredients

  • 3 tablespoons cream cheese (softened) or Greek yogurt
  • 1/4 teaspoon salt (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
  2. Beat Egg Whites: In a clean, dry bowl, beat the egg whites and cream of tartar on high speed using an electric mixer until stiff peaks form, which typically takes about 3–5 minutes. This step is crucial for achieving the bread’s signature fluffy texture.
  3. Mix Egg Yolks: In a separate bowl, combine the egg yolks with the softened cream cheese or Greek yogurt and salt. Mix thoroughly until the mixture is smooth and well combined, creating a creamy base.
  4. Fold Mixtures: Gently fold the egg yolk mixture into the whipped egg whites with a spatula. Be careful to fold gently to avoid deflating the egg whites, maintaining the light and fluffy consistency of the batter.
  5. Scoop and Shape: Scoop the batter into 6 equal-sized rounds on the prepared baking sheet. Smooth the tops slightly to help them cook evenly and resemble traditional bread rounds.
  6. Bake: Place the baking sheet in the oven and bake for 25–30 minutes until the rounds are golden brown and set, indicating they are fully cooked and airy inside.
  7. Cool: Allow the cloud bread to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely, which also helps maintain their structure.

Notes

  • Cloud bread is best enjoyed fresh on the day it’s made for optimal texture and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Use cloud bread as a low-carb bread substitute for sandwiches, burgers, or as a snack base.
