  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (10.5-ounce) can cream of celery or mushroom soup
  • 4 cups low-sodium chicken broth
  • 1/2 cup chopped yellow onion
  • 2 garlic cloves (minced)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 12 ounces frozen egg noodles (like Reames)
  • 1 cup frozen peas and carrots (optional)
  • fresh parsley for garnish (optional)

Instructions

  1. Place the chicken in the crock pot: Arrange the chicken at the bottom of a 6-quart crock pot.
  2. Add the ingredients: Pour in the cream of chicken soup, cream of celery or mushroom soup, chicken broth, onion, garlic, thyme, pepper, and salt. Stir gently.
  3. Cook the chicken: Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender.
  4. Shred the chicken: Remove chicken, shred, and return to the crock pot.
  5. Add noodles and vegetables: Stir in frozen egg noodles and peas and carrots. Cook on high for 1–1.5 hours until noodles are soft.
  6. Serve: Garnish with parsley and serve warm.
