- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup
- ½ cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes with green chiles, drained
- 1 (28 oz) bag frozen tater tots
- Salt and pepper to taste
- Chopped parsley or green onions for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef: In a skillet, cook the ground beef and onion until browned. Add garlic, cook for 1 minute, then drain excess grease.
- Combine ingredients: Stir in mushroom soup, sour cream, ½ cup cheddar, corn, and tomatoes. Season with salt and pepper.
- Assemble and bake: Spread beef mixture in dish, top with tater tots. Bake for 30–35 minutes, then add remaining cheese and bake for additional 5–10 minutes until melted.
- Serve: Let cool for 5 minutes, garnish with parsley or green onions, and serve.
