  • ½ cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes with green chiles, drained
  • 1 (28 oz) bag frozen tater tots
  • Salt and pepper to taste
  • Chopped parsley or green onions for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet, cook the ground beef and onion until browned. Add garlic, cook for 1 minute, then drain excess grease.
