For the Soup:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup water
  • 1 (14.5-ounce) can diced tomatoes (undrained)
  • 1 cup uncooked ditalini pasta
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 cups baby spinach (roughly chopped)
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks. Remove excess grease if necessary.
  2. Add onion, garlic, carrots, and celery. Cook for 5–6 minutes until the vegetables are softened.
  3. Stir in Italian seasoning and red pepper flakes, if using. Add the chicken broth, water, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in the ditalini pasta and cook for 8–10 minutes until al dente. Lower the heat and stir in the heavy cream and Parmesan cheese until melted and smooth.
  5. Add the spinach and cook for another 1–2 minutes, just until wilted. Taste and season with salt and pepper as needed.
  6. Serve hot with extra Parmesan on top if desired.

Notes

  • You can substitute kale or Swiss chard for spinach.
  • For a lighter version, use half-and-half instead of heavy cream.
