For the Soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 small yellow onion (finely chopped)
- 2 cloves garlic (minced)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 1 teaspoon dried Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 cup water
- 1 (14.5-ounce) can diced tomatoes (undrained)
- 1 cup uncooked ditalini pasta
- ¾ cup heavy cream
- ¾ cup grated Parmesan cheese
- 2 cups baby spinach (roughly chopped)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it up as it cooks. Remove excess grease if necessary.
- Add onion, garlic, carrots, and celery. Cook for 5–6 minutes until the vegetables are softened.
- Stir in Italian seasoning and red pepper flakes, if using. Add the chicken broth, water, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in the ditalini pasta and cook for 8–10 minutes until al dente. Lower the heat and stir in the heavy cream and Parmesan cheese until melted and smooth.
- Add the spinach and cook for another 1–2 minutes, just until wilted. Taste and season with salt and pepper as needed.
- Serve hot with extra Parmesan on top if desired.
Notes
- You can substitute kale or Swiss chard for spinach.
- For a lighter version, use half-and-half instead of heavy cream.
