- 2 tablespoons olive oil
- 1 medium yellow onion (diced)
- 3 garlic cloves (minced)
- 4 cups cremini or baby bella mushrooms (sliced)
- 1 cup carrots (sliced)
- 2 celery stalks (sliced)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
- 1/4 cup all-purpose flour
- 4 cups vegetable broth
- 1 tablespoon soy sauce or tamari
- 1 cup baby potatoes (halved)
- 1 bay leaf
- 1/4 cup fresh parsley (chopped, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes until softened.
- Stir in the garlic and cook for another 30 seconds.
- Add the mushrooms and cook for about 8–10 minutes, stirring occasionally, until they release their moisture and begin to brown.
- Stir in the carrots, celery, tomato paste, thyme, rosemary, paprika, salt, and pepper.
- Cook for 2–3 minutes.
- Sprinkle the flour over the vegetables and stir well to coat.
- Cook for 1–2 minutes to eliminate the raw flour taste.
- Slowly pour in the vegetable broth while stirring to avoid lumps.
- Add the soy sauce, potatoes, and bay leaf.
- Bring the stew to a simmer, cover, and let it cook for 25–30 minutes, or until the vegetables are tender and the stew has thickened.
- Remove the bay leaf and adjust seasoning as needed.
- Garnish with fresh parsley before serving.

- For a heartier version, add cooked lentils or chickpeas.
- To make it gluten-free, use a gluten-free flour blend or cornstarch instead of all-purpose flour.
