  • 2 tablespoons olive oil
  • 1 medium yellow onion (diced)
  • 3 garlic cloves (minced)
  • 4 cups cremini or baby bella mushrooms (sliced)
  • 1 cup carrots (sliced)
  • 2 celery stalks (sliced)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 cup baby potatoes (halved)
  • 1 bay leaf
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes until softened.
  2. Stir in the garlic and cook for another 30 seconds.
  3. Add the mushrooms and cook for about 8–10 minutes, stirring occasionally, until they release their moisture and begin to brown.
  4. Stir in the carrots, celery, tomato paste, thyme, rosemary, paprika, salt, and pepper.
  5. Cook for 2–3 minutes.
  6. Sprinkle the flour over the vegetables and stir well to coat.
  7. Cook for 1–2 minutes to eliminate the raw flour taste.
  8. Slowly pour in the vegetable broth while stirring to avoid lumps.
  9. Add the soy sauce, potatoes, and bay leaf.
  10. Bring the stew to a simmer, cover, and let it cook for 25–30 minutes, or until the vegetables are tender and the stew has thickened.
  11. Remove the bay leaf and adjust seasoning as needed.
  12. Garnish with fresh parsley before serving.

  • For a heartier version, add cooked lentils or chickpeas.
  • To make it gluten-free, use a gluten-free flour blend or cornstarch instead of all-purpose flour.
