Description

Cranberry Orange Semifreddo Hearts are a delightful frozen dessert combining tart cranberries and zesty orange in a creamy, airy semifreddo. Perfect for a romantic occasion or festive treat, these no-bake semifreddo hearts freeze to a smooth, mousse-like texture and can be easily made ahead.

Ingredients

Scale

Cranberry Sauce

  • 1 1/2 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/4 cup orange juice
  • 2 teaspoons orange zest

Egg Mixture

  • 3 large eggs
  • 1/2 cup granulated sugar
  • pinch of salt

Semifreddo Base

  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon vanilla extract

Garnish (optional)

  • Extra cranberries or orange zest

Instructions

  1. Cook Cranberries: In a small saucepan, combine cranberries, 1/2 cup sugar, and orange juice. Simmer over medium heat until cranberries burst and mixture thickens, about 10 minutes. Stir in orange zest and cool completely. For a smoother texture, press through a fine-mesh sieve to remove skins.
  2. Prepare Egg Mixture: In a heatproof bowl set over simmering water, whisk eggs, 1/2 cup sugar, and a pinch of salt constantly for 6–8 minutes until thick and pale. Remove from heat and continue whisking until cool.
  3. Whip Cream: In a separate bowl, whip heavy cream with vanilla extract until soft peaks form.
  4. Combine Mixtures: Gently fold the cooled egg mixture into the whipped cream, then swirl in the cranberry mixture.
  5. Freeze: Spoon the mixture into silicone heart molds or a parchment-lined loaf pan. Freeze for at least 6 hours or overnight until firm.
  6. Serve: Unmold semifreddo hearts and garnish with fresh cranberries or orange zest if desired.

Notes

  • Silicone molds facilitate easy removal, but a loaf pan is convenient if slicing to serve.
  • For a stronger citrus aroma, increase the amount of orange zest to your taste preference.
