Cranberry Sauce

- 2 teaspoons orange zest
Egg Mixture
- 3 large eggs
- 1/2 cup granulated sugar
- pinch of salt
Semifreddo Base
- 1 1/2 cups heavy whipping cream
- 1/2 teaspoon vanilla extract
Garnish (optional)
- Extra cranberries or orange zest
Instructions
- Cook Cranberries: In a small saucepan, combine cranberries, 1/2 cup sugar, and orange juice. Simmer over medium heat until cranberries burst and mixture thickens, about 10 minutes. Stir in orange zest and cool completely. For a smoother texture, press through a fine-mesh sieve to remove skins.
- Prepare Egg Mixture: In a heatproof bowl set over simmering water, whisk eggs, 1/2 cup sugar, and a pinch of salt constantly for 6–8 minutes until thick and pale. Remove from heat and continue whisking until cool.
- Whip Cream: In a separate bowl, whip heavy cream with vanilla extract until soft peaks form.
- Combine Mixtures: Gently fold the cooled egg mixture into the whipped cream, then swirl in the cranberry mixture.
- Freeze: Spoon the mixture into silicone heart molds or a parchment-lined loaf pan. Freeze for at least 6 hours or overnight until firm.
- Serve: Unmold semifreddo hearts and garnish with fresh cranberries or orange zest if desired.
Notes
- Silicone molds facilitate easy removal, but a loaf pan is convenient if slicing to serve.
- For a stronger citrus aroma, increase the amount of orange zest to your taste preference.
