  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups finely grated carrots
  • ½ cup chopped walnuts (optional)

For the cream cheese layer:

  • 8 oz cream cheese (softened)
  • ¼ cup granulated sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the carrot cake layer: In a medium bowl, whisk together the dry ingredients. In a separate large bowl, mix sugars, oil, eggs, and vanilla. Combine wet and dry ingredients, fold in carrots and walnuts, then pour most of the batter into the pan.
  3. Make the cream cheese layer: Beat cream cheese, sugar, egg yolk, and vanilla until smooth. Spread over the carrot cake layer. Drop spoonfuls of reserved batter on top and swirl.
  4. Bake: Bake for 30–35 minutes until set. Cool completely before slicing.
