Ingredients

Scale

Main Ingredients

  • 1 sheet frozen puff pastry (thawed)
  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (chopped) or 1 cup frozen spinach (thawed and squeezed dry)
  • 4 oz cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Onions and Garlic: Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until soft and translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Cook Spinach: Stir in the fresh or thawed frozen spinach and cook until wilted or warmed through. Remove the skillet from heat and allow the mixture to cool slightly to prevent melting the cream cheese when combined.
  4. Mix Filling: In a mixing bowl, combine the slightly cooled spinach mixture with softened cream cheese, grated Parmesan, salt, and black pepper. Stir until well blended and creamy.
  5. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a 10×10-inch square. Cut the square into 9 equal smaller squares for individual puffs.
  6. Assemble Puffs: Place a spoonful of the spinach and cream cheese mixture in the center of each puff pastry square. Fold the corners towards the center, pinching gently to seal, or leave slightly open for a rustic appearance.
  7. Apply Egg Wash: Transfer the assembled puffs to the prepared baking sheet. Brush each puff gently with beaten egg, which will give the pastry a beautiful golden sheen.
  8. Bake: Bake in the preheated oven for 15–18 minutes or until the puffs are puffed up and golden brown in color.
  9. Serve: Remove from the oven and serve warm as a delicious appetizer or snack.

Notes

  • You can prepare the filling a day in advance and store it in the refrigerator to save time.
  • These puffs freeze well before baking; when baking from frozen, extend the bake time by 2–3 minutes to ensure they cook through.
  • If using frozen spinach, make sure to thoroughly squeeze out excess water to prevent soggy filling.
  • For a dairy-free option, substitute cream cheese and Parmesan with plant-based alternatives.
