Instructions

  1. Cook Pasta: Cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water for later use.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, black pepper, smoked paprika, garlic powder, and optional cayenne pepper. Add the chicken to the skillet and cook for 6–8 minutes, turning occasionally, until browned and cooked through. Transfer cooked chicken to a plate and set aside.
  3. Make Sauce Base: In the same skillet, melt butter over medium heat. Add minced garlic and red pepper flakes, cooking for 1–2 minutes until fragrant but not browned.
  4. Add Flavorings: Stir in Dijon mustard and lemon juice to the butter and garlic mixture, blending well.
  5. Simmer Sauce: Pour in chicken broth and bring the mixture to a simmer. Reduce heat, then stir in heavy cream and continue simmering for 2–3 minutes until the sauce thickens slightly.
  6. Combine Chicken and Pasta: Return the cooked chicken to the skillet along with the drained linguine. Toss everything together to coat the pasta and chicken evenly in the creamy cowboy butter sauce. Add some reserved pasta water if the sauce needs loosening for a smoother texture.
