Instructions

  2. Sear the Steaks: Heat olive oil in a large skillet over medium-high heat. Once hot, add the steaks and sear for 3–4 minutes per side for medium-rare, or longer to reach your desired doneness. Remove the steaks from the skillet and set aside to rest, preserving their juiciness.
  3. Make the Garlic Sauce: Reduce the skillet heat to medium and add the unsalted butter. When melted, add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it. Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes to reduce slightly.
  4. Finish the Sauce: Stir in the heavy cream, grated Parmesan cheese, garlic powder, and dried thyme or rosemary if using. Simmer the sauce for 3–5 minutes, stirring occasionally, until it thickens slightly and becomes creamy.
