 - 1/4 teaspoon xanthan gum
 
Optional Toppings:
- Sugar-free whipped cream
 - Crushed keto vanilla cookies
 
Instructions
- In a medium saucepan over medium heat, whisk together heavy cream, almond milk, sweetener, and egg yolks.
 - Remove from heat and stir in banana extract, vanilla extract, and xanthan gum, whisking until smooth.
 - Chill for at least 2 hours, or until set.
 - Serve topped with sugar-free whipped cream and crushed keto cookies if desired.
 
Cook, whisking constantly, until mixture thickens enough to coat the back of a spoon, about 6–8 minutes; do not boil.
Pour pudding into serving dishes and cover with plastic wrap directly on the surface to prevent a skin from forming.
Notes
- Xanthan gum helps thicken the pudding without adding carbs; you can omit it for a softer texture.
 - Adjust banana extract to taste—start with 1 teaspoon and increase if a stronger flavor is desired.
