Pasta:

  • 12 oz fettuccine or linguine pasta

Shrimp:

  • 1 lb large shrimp (peeled and deveined)

Sauce:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic (minced)
  • 1 teaspoon red pepper flakes
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Garnish:

  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta: Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Cook the shrimp: Sear shrimp in olive oil and butter until pink; remove and set aside.
  3. Make the sauce: Sauté garlic and red pepper flakes, add sun-dried tomatoes, broth, cream, Parmesan, and seasoning. Simmer until thickened.
  4. Combine: Return shrimp to pan, add pasta, and toss to coat. Adjust consistency with reserved pasta water.
  5. Serve: Garnish with basil or parsley and extra Parmesan. Enjoy hot!
