Scale
Base Ingredients
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 8 oz mushrooms, sliced (cremini, white, or a mix)
- 2 garlic cloves, minced
Thickening and Liquids
- 1/4 cup all-purpose flour
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
Seasonings
- 1 tsp soy sauce or Worcestershire sauce
- 1/2 tsp dried thyme or rosemary (optional)
- Salt and black pepper, to taste
Garnish
- Fresh parsley, chopped
Instructions
- Cook the Mushrooms: In a large skillet over medium heat, melt the butter with the olive oil. Add the sliced mushrooms and cook for 6–8 minutes, stirring occasionally, until the mushrooms are browned and their moisture has evaporated.
- Add Garlic: Add the minced garlic to the mushrooms and cook for another 30 seconds until fragrant.
- Incorporate Flour: Sprinkle the flour over the mushrooms and stir well to coat evenly. Cook for 1–2 minutes to eliminate the raw flour taste.
- Add Broth Carefully: Gradually pour in the broth while stirring continuously to prevent lumps. Bring the mixture to a gentle simmer and cook for 3–4 minutes until thickened.
- Finish the Gravy: Stir in the heavy cream, soy sauce or Worcestershire sauce, and thyme if using. Let the gravy simmer for another 2–3 minutes.
- Season and Serve: Season with salt and black pepper to taste. Garnish with chopped fresh parsley and serve warm over mashed potatoes, meat, or vegetables.
Notes
- For a dairy-free version, substitute butter with plant-based butter and use coconut cream or cashew cream instead of heavy cream.
- You can prepare the gravy ahead of time and gently reheat it on the stovetop, adding a splash of broth to loosen the consistency if needed.
- This gravy pairs well not only with mashed potatoes but also with roasted vegetables and various meat dishes.
